Honey Almond Chicken [Dec. 7th, 2005|10:21 am]
What's for dinner?

6 bone-in chicken parts
1/2 cup butter
1 large onion, chopped
1/4 cup honey
1/4 cup slivered almonds
1/4 cup lemon juice


Preheat oven to 350 degrees F (175 degrees C). Arrange chicken parts in a baking dish.
Melt butter in a skillet over medium heat, and cook onion 5 minutes, until tender. Stir in honey, almonds, and lemon juice, and continue cooking 2 minutes, or until heated through. Pour over the chicken, coating each piece.
Cover dish with aluminum foil. Bake chicken 30 minutes in the preheated oven. Remove foil, and continue baking 30 minutes, until chicken juices run clear

Chocolate and Almond Biscotti [Dec. 7th, 2005|10:20 am]

1 1/2 cups blanched whole almonds
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon salt
7/8 cup white sugar
2 cups semisweet chocolate chips
2 eggs
1 teaspoon vanilla extract
2 tablespoons whiskey


Preheat oven to 350 degrees F. Toast the almonds in a shallow pan for 12 to 15 minutes, shaking the pan a few times, until almonds are lightly colored. Set aside to cool.
Preheat oven to 375 degrees F. Line 2 or 3 flat edged cookie sheets with aluminum foil, shiny side up.
Sift together the flour, baking soda, baking powder, and salt. Add the sugar and mix well.
Place 1/2 cup of these dry ingredients into the bowl of a food processor fitted with a metal chopping blade. Add about a half cup of the toasted almonds and process for about 30 seconds.
Add the mixture to the sifted ingredients. Add the remaining almonds and chocolate morsels and stir well.
In a separate bowl, beat the eggs, vanilla and whiskey.
Pour into dry ingredients and stir until moist.
Place dough on wax paper, and with wet hands, press into a round mound.
With a long, heavy knife, cut the dough into equal quarters. Keeping hands wet, form each quarter into strips about 9 inches long ,2 inches wide and 1/2 inch high. Round the ends.
Place two strips crosswise on each of the cookie sheets.. Bake for 25 minutes. If baking more that one sheet at a time, reverse the sheets top to bottom and from to back half way through cooking time.
Using a metal spatula remove foil from cookie sheets and let cool for 20 minutes on cutting board. Reduce oven temperature to 275 degrees F.
With a serrated knife, carefully cut at an angle into slices about 1/4 inch wide. Place the slices, cut side down, onto unlined cookie sheets.
Bake 25 to 30 minutes, reversing sheets top to bottom and front to back after 15 minutes.
Turn oven off and open the oven door, allowing the biscotti to cool in the oven. When cool, store in an airtight container.

1/2 cup shortening
1/2 cup butter
2/3 cup ground blanched almonds
1 2/3 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 cup confectioners' sugar
1 teaspoon ground cinnamon


Mix together shortening, butter and almonds. Sift in flour and salt. Add vanilla.
Chill dough until firm.
Preheat oven to 325 degrees F (170 degrees C).
Roll dough with hands into 3 inch lengths, pencil thick. Form into crescents on ungreased baking sheet. Bake until just slightly brown -- about 16 minutes. Cool on pan
While still slightly warm, carefully dip in a mixture of confectioner's sugar and cinnamon. These are extremely fragile cookies -- handle with care!

Sweet Potato Pie [Dec. 1st, 2005|09:27 am]

2 cups mashed sweet potatoes
1/4 pound butter, softened
2 eggs, separated
1 cup packed brown sugar
1/4 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup evaporated milk
1/4 cup white sugar
1 (9 inch) unbaked pie crust


Preheat oven to 400 degrees F (200 degrees C).
In a mixing bowl, combine the sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk. Mix together well.
Beat egg whites until stiff peaks form; add 1/4 cup sugar and fold into sweet potato mixture.
Pour into pie shell and bake at 400 degrees F (200 degrees C) for 10 minutes. Reduce heat and bake at 350 degrees F (175 degrees C) for 30 minutes or until firm.

Sweet Potato Rolls [Dec. 1st, 2005|09:26 am]

1 (.25 ounce) package active dry yeast
4 tablespoons white sugar
1 1/2 cups canned sweet potato puree
1/2 cup warm water (110 degrees F/45 degrees C)
3 tablespoons margarine, softened
1 teaspoon salt
2 eggs
3 cups all-purpose flour


Dissolve yeast, warm water, and 1 tablespoon sugar in a mixing bowl. Let stand 5 minutes.
Add remaining sugar, sweet potato, butter or margarine, salt, and slightly beaten eggs. Stir to mix well. Stir in 3 cups of flour. Turn out on a lightly floured surface. Knead 2 to 3 minutes, adding just enough of remaining flour to prevent sticking. Do not knead too heavily; when smooth, shape into a ball. Place in an oiled bowl, and turn to coat the surface. Cover, and let raise about 1 hour or longer.
Punch down, and allow dough to rest for 2 minutes. Divide into 16 to 20 balls, and place on a greased cookie sheet or in a 9x13 inch pan. Allow to rise until doubled.
Bake at 375 degrees F (190 degrees C) for 12 to 20 minutes. Serve warm.

1/4 cup milk
2 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter
1/4 cup white sugar
1 egg
1 teaspoon ground cinnamon
1/2 cup honey
1 cup peeled, shredded sweet potato
1/2 teaspoon baking soda


Preheat oven to 350 degrees F (175 degrees C).
Combine sugar and butter or margarine. Blend in egg, honey, and sweet potato.
Sift together flour, baking soda, baking powder, salt, and cinnamon. Blend in butter mixture and milk.
Drop from a teaspoon 2 inches apart onto greased cookie sheets. Bake for 15 to 20 minutes until brown.

4 1/2 cups cooked and mashed sweet potatoes
1/2 cup butter, melted
1/3 cup milk
1 cup white sugar
1/2 teaspoon vanilla extract
2 eggs, beaten
1 cup light brown sugar
1/2 cup all-purpose flour
1/3 cup butter
1 cup chopped pecans


Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
Bake for 25 minutes in the preheated oven, or until golden

Sweet Potato Crisps [Nov. 28th, 2005|12:50 pm]
What's for dinner?

4 medium-size sweet potatoes
1 to 2 teaspoons walnut oil
2 teaspoons onion powder
2 teaspoons garlic powder
1/2 to 1 teaspoon pepper
1/2 teaspoon hot
chili powder

Preheat oven to 450 degrees F.

Scrub potatoes well and cut in 1/8 inch slices.

Coat a non-stick baking sheet with walnut oil and arrange potato slices on it. Combine the seasonings. Sprinkle potatoes with half of the seasonings. Bake 10 minutes.

Using a large spatula, turn, sprinkle with remaining seasonings and bake 10 minutes more until crisp. Serve immediately.
